Another Successful Dinner


It might still feel like summer in Dallas, but I'm trying to trick mother nature. If I make cold weather recipes the temperatures will go down, right?! Wrong! I made Crock Pot Chicken Taco Chili the other night and it's still going to be 90 today! Blah! At least it felt like fall in my kitchen! 


I adapted the recipe from here after seeing it on Pinterest. Some ingredients I omitted or substituted and I'm so glad I did because it was pretty spicy. 

Crock Pot Chicken Taco Chili

Ingredients: 
  • 1 onion, chopped
  • 1 16-oz can black beans
  • 1 16-oz can kidney beans ( I omitted these) 
  • 1 8-oz can tomato sauce
  • 10 oz package frozen corn kernels
  • 2 14.5-oz cans diced tomatoes w/chilies ( I used 1 can of Rotel and 1 can of diced tomatoes)
  • 1 packet taco seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 24 oz (3-4) boneless skinless chicken breasts ( I used tenders)
  • chili peppers, chopped  (I omitted this)
  • 1/4 cup chopped fresh cilantro (I used dry cilantro) 
  • 1 8-oz can of water
Directions: 
    Combine everything in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with Fritos, cheese, sour cream, and avocado! 

    This recipe even got the hubby's approval so I know we will be trying it again in the future!

    What's For Dinner


    Do you find yourself scrambling through the kitchen daily trying to figure out what's for dinner?! I do, and we never have enough ingredients for most recipes. So, when I found this chicken taco recipe on Pinterest, I was elated that I only needed a few ingredients. And, surprise surprise, I had most of them on hand! The bonus, it's a crock pot recipe which means easy clean up! 


    Crockpot Chicken Tacos
    Recipe from Tasty Kitchen

    Serves: ~12 people

    1 Envelope Taco Seasoning (I use Old El Paso Reduced Sodium)
    6 Pieces Boneless, Skinless Chicken Breasts or Chicken Tenders
    1 16-ounce jar Salsa (I used Trader Joe's Roasted Garlic Salsa)
    1 Package of Tortillas (I prefer corn) 

    Dump everything into a crock pot and give it a little stir to blend the seasoning with the salsa. I also added half a cup of water since my mixture was very thick and some diced onion for taste. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken shreds easily. 

    You can serve the tacos with tortillas, guacamole, lettuce, shredded cheese and/or sour cream. 

    This recipe is a keeper! Fast, and delicious!

    Spring Eating

     
    Do you feel like your taste buds change with the weather? With spring and warm weather here I've been craving lighter foods such as salads, fruits, and vegetables. I've been perusing sites trying to find new recipes to satisfy my taste buds. Here's a few that look delicious!

    One can never go wrong with a fresh fruit tart. It's one of my favorite spring/summer desserts! They have just enough sweetness to fulfill without making you feel like you overindulged.

    I've been Pinspired

     
    Is that a word? Well, it is now. You get it right?! I've been inspired by Pinterest. Anyways, here's what I'm eyeing lately.
     
     
    I'm absolutely loving this nursery Kirsten designed! The gallery frames mixed with a shelf full of books is simply perfect and unexpected. The wall color is so serene!
     


    How striking is this Begonia wall color from Sherwin Williams? This on the ceiling with white walls would be unbelievable!




    Need new bedding? I didn't until I saw this coral border bedding from Crane and Company! It comes in gray too and the prices are very reasonable.
     
    
     
    I've really been making a conscience effort to find healthy new recipes to try out. We have been eating out way too often and honestly I'm bored with restaurants. Plus, some nights it's just easier to relax at home and eat while my kiddo plays and runs free.
     
     
    How fun and festive are these mojitos from Style Me Pretty?! Looks like little pink tutus on straws! They almost look to perfect to drink, but I'm sure they are fabulous tasting! I need to make these for a party sometime!

    Fashion Board

    Are you obsessed with Pinterest like myself? One of my boards on Pinterest is for fashion, but if you are anything like me, you walk in your closet and forget everything you pinned. I seem to stare aimlessly at my clothes some days trying to piece together new outfits.
    It dawned on me that I need to bring my fashion board to life and hang it in my closet to inspire my looks. So, over the weekend I found an old cork board collecting dust upstairs that got transformed into this.


    All it took was 3/4 yard of a stylish fabric, ribbon, a staple gun, and spray adhesive. 

    I simply covered the board by attaching the fabric with the spray adhesive and then stapling the access on the back after I neatly folded the corners over. It took all of 5 minutes to complete. 

       The ribbon was added with hot glue, then I hung my new fashion board in the closet on a command hook and started adding printed pics of pinned items. 





    Now, instead of staring aimlessly at my clothes, outfits can easily be assembled with inspiration closely at hand.

    I Spy....










    poufs, in pairs! And speaking of poufs, mine finally arrived from Joss and Main.  For now, my silver beauty is just hanging out in the game room.  No, not  a pair for me, just 1. It actually arrived a month ago, but I'm just now getting around to posting about it. Gosh, I'm a slacker! 





    I think she adds a bit of sparkle and pizazz to the space. What do you think?

    Fall is Here..

    Fall has arrived with cool temps and a tad bit of rain this last week. I love the changing colors in nature, dressing in layers, decorating for the season, and toting a hot drink in my hand. (Starbucks?!) 



    The Pumpkin Spice Latte is one of my fall faves at Starbucks. I always get it with whip cream on top too! Who cares that it has 300 calories and 11grams of fat for a tall? I burn that in like 30 minutes of chasing Baby A around! Ha! And, just in case I don't burn it off, then there are always long shirts to cover up muffin top, right!

    Pinterest

    Pinterest is taking over my life. Well, not exactly, but it sure does occupy a lot of my time. It's amazing how one site can give me so much inspiration. I should probably stay away though since every time I get on there I come up with new ideas for my home. It's like the wheels start spinning 90 to nothing as soon as I log on.
